In this section, we hope to provide useful information that will help you get the most benefit
from your CSA produce.   Prepared in new and imaginative ways, eating fresh vegetables
can be an enjoyable and even sensual experience.   Your cookbook

Zucchini" i
s intended to jump-start you into this experience.  Of course, if you are a
seasoned chef, you are already there.

While cooking enhances the flavor, and in some cases the nutritional value, most experts
believe you should approximate the "80/20" rule.   80% raw, 20% cooked.  There is nothing
like the taste of fresh scallions or sugar peas, straight from the garden.

In addition to this cookbook, we hope to provide additional recipes and information in this
section.  If you have a favorite recipe for produce that we grow,  please let us know, and we
will post it here.

When it comes to healthy eating, there are just a few basic principles that apply - and you've
probably heard them as a child.   Jack Lalane, the seasoned health & fitness guru, uniquely
expresses two of these mantras, also found elsewhere on our website.
  •        If man made it, don't eat it
  •        Don't exceed the feed limit.

For those of you w
ho want to drill a little deeper, however, we hope to provide some
additional "food" for thought in this section.  

We all face health issues from time to time.  Cancer, however, seems to be one of the most
troubling plagues of our time.    It is probably fair to say that everyone reading this has been
affected in some way by this disease, whether a friend, a neighbor, co-worker, or family
member.  Or this may be a personal battle.

Many scientists and practitioners believe that nutrition plays a key, if not pivotal role in the
prevention of cancer.  In his book
"Foods that Fight Cancer",  Dr. Richard Beliveau clearly
explains at the layman's level specific properties of certain foods that thwart the growth and
spread of cancer.   In the final chapter, Dr Beliveau nets out what he believes to be  the
optimal cancer prevention diet.   This diet is charted below, bu
